Vegetable Soup with Orzo

This is the perfect thing to make when you have some veggies in your fridge that you really need to use! The beauty of it is that you can throw in whatever you have on hand and it's always good! I love making soups for easy make-ahead lunches. This one is hearty, filling and healthy too!

Vegetable Soup with Orzo

1 container of veggie or chicken stock
About a cup of uncooked orzo
1 cup fresh spinach - chopped
1/2 cup carrots - chopped
1/2 cup celery - chopped
1 can of tomatoes
1 can of black eyed peas
Basil, cumin and salt & pepper to taste

I started by sauteing the carrots and celery in the pot with just a few tablespoons of broth. After that, I added the rest of the box of broth and the beans, tomatoes and orzo. Cover it for a few minutes and let it all come together. The orzo will cook in the broth which adds even more flavor! Throw in the spinach last, it only takes a few minutes to cook. Add the spices to taste and enjoy!
