The other day, I whipped up a brown rice salad that was so quick, easy and delicious I thought I would share it with you other salad lovers out there. It makes the perfect quick and healthy lunch. I'm all about pre-prepared dishes that make a quick meal possible. This brown rice mix is perfect on top of a bed of lettuce. I usually add some avocado and Cardini's Caesar dressing (the best salad dressing!).
Here's what's in the brown rice salad:
3 cups of brown rice (or quinoa)
2 red peppers, chopped
1 can of black eyed peas, rinsed
1/4 cup of parsley, finely chopped
3 tablespoons of lemon juice
I would have added some chopped cucumber or celery too, if I had any on hand when I made it! It's great alone or served on top of lettuce. Enjoy!
