Let me tell you, this is hands down one of the best (if not the best) salads I've ever had. And that's saying a lot because I love salads. Sometimes when I say that, people think I mean rabbit food - lettuce with oil and vinegar. Yeah right.
I mean those "everything but the kitchen sink salads".
Where you throw in some of whatever you've got on hand and top it with a (preferably creamy) dressing to tie it all together. Nothing better!
When I saw this pin I knew I was done for and just had to try it! I'm so glad I did.
I made Texas Toast and a special "BBQ-Ranch" dressing to go with the salad and it was a match made in heaven. I also sautéed some red onion (in addition to the raw, chopped, red onion. The first time I made it, I didn't have any corn. A few days later, I tried to again and this sautéed some corn as a topper.. major success.
