A New Recipe..

*4/13/12 edit: Now we would make this with quinoa pasta & no cheese :)

Our method of cooking in this household is typically 'throw something together with whatever veggies you have in the fridge' style. Yesterday we had lemons, asparagus, half of a tomato and half of a can of tomatoes. One of our go-to meals with random veggies is pasta. We always have lots of boxes of whole wheat pastas, tomato sauce and jars of pesto on hand to throw something together.

We came up with a blend of flavors that was so good I had to share it with you!

Lemon-Pesto Penne with Asparagus and Tomatoes




Ingredients:

1 13.25 oz. box of whole wheat penne
1 small package of asparagus - about 12 stalks (chopped into 1 inch pieces)
1 TSP Garlic Powder
3 TBSP pesto
Cracked pepper
1 Lemon 
1 Tomato or 1 can of tomatoes 
Parmesan cheese & Pine nuts for topping


Step 1: Bring pot of water to a boil with a pinch of kosher salt, when boiling, add noodles
Step 2: Meanwhile, squeeze some lemon juice (about 1 TBSP) into a skillet and add 1 TBSP of olive oil. Add the asparagus, cracked pepper and garlic powder, stir and cover for about 5 min. 
Step 3: Add the tomatoes and a little bit more lemon juice, stir together, cover
Step 4: Whenever the pasta is cooked, strain it and add it to the skillet a little bit at a time, stir
Step 5: Add pesto and the juice from the other half of the lemon, stir
Step 6: Serve while hot, top with Pine nuts and Parmesan cheese
*Goes great with a salad and bread sticks on the side!

Tips:  

*Use a strainer while squeezing out the lemon juice so you don't get lemon seeds in your pasta
*Don't dump all of the pasta into the skillet at once, add about half of it at a time. It's easier to stir and you can always leave some noodles out if it's too much.
*Use half of the lemon juice while cooking the vegetables and half to top the pasta
*For even more fresh lemon flavor, use some lemon zest to top the pasta too
