Sauteed Kale and Veggies

So last night I came up with a new recipe - It's actually a me orginal. Basically I just threw together things I had in the fridge that I wanted to use up. I hear a lot of people say they love kale but don't know how to cook with it. It makes a great side dish or salad. You can improvise however you want - it will still be good! As you can see, I just throw things together and taste every once in awhile to make sure it's headed in the direction I want it to.

Sauteed Kale with Mixed Vegetables

2(ish) cups on rinsed, chopped kale
Handful of Mushrooms
Some Sun-dried Tomatoes
Handful of roasted soy-nuts
Some Chopped Cauliflower
Garlic or Garlic Powder
White wine (I used chardonnay)
Lemon Juice
Olive Oil


 *Sautee mushrooms with garlic(or garlic powder) on medium/high heat in a tablespoon or so of olive oil

*After a few minutes add a splash of white wine and the sun-dried tomatoes and cauliflower

*Cover, reduce heat and stir every once in awhile.

*After letting that simmer for a few minutes to lock in flavor, add the kale 

*Pour 2(ish) tablespoons of lemon juice over the kale  

*Add another splash of the white wine for flavor

*Cover, reduce heat

*Stir frequently but keep covered to thoroughly cook Kale

I used it as a side dish for Creamy Chicken Pot Pie


This is a typical 'me' dish - doesn't look very pretty but usually tastes ok :)
