We tried a great new recipe last night, slow cooker veggie soup with kale:
I have always been a big fan of soup, especially this time of year. Yesterday I found this recipe for vegetable soup with kale. I decided to make mine in the slow cooker and take out some of the more time consuming parts (like chopping garlic..sometimes you just can't be bothered, am I wrong?).
Throw it all in the slow cooker (on high about 2.5 hours) and don't add the kale until the last hour or so.
- 3 medium carrots, peeled and quartered lengthwise
- 1 can of diced tomatoes
- 1 15 oz can of Great Northern white beans, drained
- 4.5 cups of chicken broth
- 4 cups of finely chopped kale
- Garlic powder
- Bay leaf flakes
We had it with some baked sweet potatoes and southwestern style cornbread (leftover from when we had company on Sunday). Let's not forget the chocolate covered strawberries for dessert.. the best part about Valentine's day if you ask me!
