So anyone interested in healthy cooking has surely heard of Kale. In case you're curious about Kale read below.. if not skip that, you'll find it boring.
Kale (comes in a leafy bunch) is abundant in calcium, lutein, iron, and Vitamins A, C, and K. It has seven times the beta-carotene of broccoli and ten times more lutein. Kale is also rich in Vitamin C not to mention that much needed fiber. I shouldn't fail to mention the all important antioxidant Vitamin E. So be well assured, friends, that kale really very little to be desired in providing us with much needed nutrients. Read more here!
So after hearing so much about it I was definitely adding this to the shopping list - 1 BIG bunch : $1.59. No joke! So I want to incorporate it into a meal, but first I decided to use some of it for a healthy snack (I'm addicted to crunchy, salty things. I'm not a big potato chip person so my snacks of choice are typically pretzels or baked whole wheat pita chips). Enter a new healthy snack - with a crunch: baked kale!
*Rip it up into shreds, drizzle with olive oil (I used olive oil cooking spray), bake at 350 degrees for 10-12 minutes.. add some salt, pepper, various seasons of your choice.. and done! Crunchy, healthy and super tasty. ("Recipe" here!)

As for the dinner I wanted to make using kale - I was thinking: Kale sauteed with garlic and roasted potatoes, sweet potatoes, acorn squash, with some spicy quinoa on the side. That was the plan for tonight. However.. sleeping did not really happen for me last night for more than a few hours at a time. Combine that with lack of sleep from the weekend, the cold weather, covering classes due to deaths in the family.. I am just not feeling 100% today. It would definitely be a "long afternoon nap" kind of day except for that pesky thing called work and responsibilities. I told the husband I was feeling run-down, so now there is no way I am getting in that kitchen tonight. He says after getting home from teaching it's "straight to bed with you Mrs. Mrs. I am making home-made soup!". So I'll
insist suggest that he take pictures and save the recipe so this week's New Recipe Tuesday will be "Darling Husband" style. Who's excited?
